The CCA [in education] is a professional body for the catering in the education sector.

Huddersfield Technical College Advanced Culinary Diploma and sponsored by the CCA took part in the Northern Heat of the UK Seafood Championships.

Huddersfield Technical College's future Rick Steins turned up the heat when they competed in a competition to find the best student chefs specialising in fish cookery.

A duo from the College's Advanced Culinary Diploma and sponsored by the CCA took part in the Northern Heat of the UK Seafood Championships.
Ghislain Aguiar (29 from Lowerhouses) and Anna Harding (19 from Golcar) will now go onto the grand final in June.

Their culinary skills were tested to the limit in a pressurized three-hour cook off where they had to prepare three fish dishes for six people costing no more than £60. 3
Their winning menu consisted of:

Starter - Citrus cured pacific salmon on rocket and crisp okra with a beetroot emulsion 5

Soup - Consommé of New Zealand hoki, tomato and ceylon tea with a herbed rice waffle
Main - Dover sole stuffed with chestnut mushrooms wrapped in savoy cabbage with gaufrette potato and hollandaise sauce

The winning team at the grand final will receive a £1,000 cheque, chef knives and a one-week placement at Young's development kitchens. The
winning College also receives £1,000 towards new catering equipment. 6
